I was a long-time sufferer - er, user - of Word 2011 for Mac, so when Word 2016 was released, I jumped right on it. And I've had such a bad experience that I'm considering going back to 2011.

I won't even mention general problems, like instability (Word crashed literally the first time after install, and frequently hangs - sometimes momentarily, sometimes an extended period, sometimes permanently until restarting the process) or typing lag (it's VERY common for typing to be applied to a document only after a momentary delay. Extraordinarily irritating).
I'm only mentioning specific behaviors that are causing problems - posting here to see if anyone has advice about these weird problems, or at least is having similar experiences: 1) Key reassignments are really buggy. For some reason, the functions that I use most often - Zoom In, Zoom Out, and Strikethrough - aren't assigned to any convenient key combination. When I try to reassign them to a key, Word tells me it's reassigned, but it often keeps its original function. Example: I ask to assign Command+K to Strikethrough. It tells me that the combination is currently assigned to Insert Hyperlink, but lets me assign it. It also tells me that Insert Hyperlink is now unbound.
However, Command+K still inserts hyperlinks rather than strikethrough. This behavior persists even if I ask to unassign Insert Hyperlink to Command+K first. The only way I've found to force it to work is to map Insert Hyperlink to something else first. 2) I cannot get key reassignments to stick.
Very often, when I close and restart Word, the key reassignments revert to their original behavior. I've even gone as far as finding the Normal template file, opening it, creating my key bindings, and saving it as a template over the original file.

Didn't help much. My key bindings revert most often when Word crashes. Probably 90% of the time I restart after a crash, my key bindings have been reset.
3) Reopening the same document repeatedly upon startup. Word now starts up with 'Normal.dotm (Recovered)'.
